Method
- Preheat the oven to 375
- Add an appropriate size of parchment paper to a cookie sheet with sides
- Place the Italian sausage links on the parchment paper and put them into the oven. Cook for approximately twenty minutes, checking the internal temp until 165 degrees. Remove and set aside.
- Add olive oil to a large fry pan (cast iron preferred), heat, and add onion, zucchini, green pepper, mushrooms, garlic, and celery. Sauté and stir for about 10 minutes. All veggies should be softened and translucent.
- While the veggies are sautéing, cut the cooked Italian Sausage into 1/4-inch slices.
- Add the canned tomatoes and juices into the stock pot and break them into pieces using a potato masher. Add the chicken stock. Add the vegetables and Italian Sausage to the tomatoes.
- Bring to a boil, reduce heat, and simmer covered for twenty minutes. Then enjoy!!!!!
Notes
Options: As stated above, there are many options 1) Pasta of interesting shapes 2) A variety of bean choices such as Kidney, Navy, or Great Northern 3) An additional pound of Hot Italian Sausage (I like lots of Italian Sausages) 4) For a vegetarian version, omit the sausage and add more mushrooms 5) Add some cooked ravioli or tortellini
