Method
- Fill Dutch oven halfway and bring to boil. Cook ravioli according to the package instructions, remove and rinse. I prefer fresh when available.
- Toast almond slivers in a dry pan until light brown, then remove to a plate
- Add grape seed oil to the pan and heat until hot
- Add mushrooms to the pan and saute until water is released from the mushrooms
- When the mushrooms are browned, add the artichokes, capers, sun-dried tomatoes, garlic, Hearts of Palm, and Italian seasoning. Saute for three minutes and add the three cups of baby spinach. If the contents are too dry, add a little more oil.
- Add the almonds and stir.
- Add the cooked Mushroom Ravioli and stir until everything is combined.
- Plate the dish and sprinkle parmesan as desired.
Notes
I've listed fresh mushroom ravioli as an ingredient, and I did so because it is fantastic in this recipe. If you don't have that available, any ravioli can be substituted. Fresh ravioli is now readily available in most grocery stores, but frozen ravioli will do very well. Feel free to adjust the amounts of ingredients based on the number of servings you plan.
