Grilled Thai Chicken

Robust Thai flavors of lemongrass, fish sauce, and coriander make this truly memorable.

Ingredients

  • 1/2 cup brown sugar (light or dark)
  • 5 tbsp chopped scallions
  • 5 tbsp chopped lemongrass bottoms or internal soft stalk
  • 1/3 cup water
  • 2 tbsp minced ginger
  • 1 tbsp chopped fresh basil leaves or 1/3 tbsp dried
  • 1 tbsp minced garlic
  • 3/4 cup fish sauce

Equipment

  • 1 blender
  • 1 Large bowl with top
  • 1 cutting board
  • 1 Chef Knife
  • 1 grill

Method

  1. Combine brown sugar and the following eight ingredients in a blender and puree until smooth. The last time I made this, I forgot to blend the ingredients, and it turned out fine.
  2. Combine chicken and marinade in a bowl or plastic bag. The original recipe called for one hour, but I prefer overnight.
  3. Grill chicken and season with salt and pepper. Use a meat thermometer and grill to an internal temperature of 165.
  4. Remove and let sit for five minutes. Slice the chicken on an angle and serve. I like to serve this with thick udon noodles smothered in peanut sauce. That recipe will be posted next. You could also serve it with rice.
