This is a recipe I created to duplicate one of my favorite breakfasts of all time. In the mid-eighties, I frequently visited Cafe Madison in Albany, New York, and always ordered the Potatoes O’brien Omelette. I have never found it in any other restaurant, so I devised my own recipe. After many iterations, I refined it to where it’s as good as the original. Enjoy!
Potatoes O'brien Omelette
This was created after my favorite omelette from Cafe Madison in Albany, New York. You'll enjoy it!

- In the cast iron pan, add oil and sauté the onions until caramelized.
- Add green pepper to the onion and sauté until slightly browned.
- Add the potatoes to the onion mixture and put heat on a low setting.
- Heat butter in omelette in the non-stick sauté pan and add the beaten. Cook at medium heat, and add the cheese. Add Canadian bacon and a scoop of potatoes O’brien. When the cheese has melted, fold it in half.
