Kung Pao Shrimp Recipe
Gallo’s Special Shrimp recipe is my all-time favorite shrimp dish, and I believe it will become yours. It is also simple and fast to make. This recipe has been adapted from The Chinese Cookbook by Craig Claiborne and Virginia Lee and was called Kung Poa Shrimp in their cookbook.
I changed the name with my adaptation because, to most people, Kung Poa is synonymous with peanuts and red dried peppers, neither of which are in this recipe. The cookbook was first published in 1972 and was my first and favorite.
Mine eventually fell apart, and I found another first edition online. It hasn’t been in print for many years but is timeless. Enjoy!
Atmosphere
This wonderful dish has intense flavors, with garlic and ginger root intermingling with sugar and vinegar to create a complex delight for the taste buds. A clean, cold Kabinett, the lightest style of the Reisling wines, makes a perfect choice to enjoy with the meal. Do a white or fried rice side to soak up any extra sauce, and enjoy what may become your favorite way to cook shrimp.
