Are you looking for an incredible Bucatini all’Amatriciana recipe? Then try the recipe below!

Bucatini all’Amatriciana is one of my all-time favorites for several reasons. The first time I tasted it was when my family was at Disney World, and we lunched at Portabellos in Downtown Disney.
I ordered their version with penne pasta, and I was hooked. The combination of pancetta, San Marzano tomatoes, and garlic was irresistible. I experimented with many recipes along the way and eventually swapped out the penne for bucatini. This dish is in my rotation that I make regularly. It freezes beautifully, so sometimes I make a double batch and vacuum bag individual serving for a fast, fabulous dinner when I feel lazy
Atmosphere:
What is better to go with cooking an Italnian meal than listening to Dean Martin?
If you want to listen to something a little different, try the theme park entrance music to Disney!
It adds a lot of whimsy and fun.
I’d also make this while drinking a beautiful wine (choose your favorite) and enjoy!

Method
- Make sure you are using San Marzano plum tomatoes. They are sweeter and more expensive than regular plum tomatoes but worth the extra priceRemove each tomato to a cutting board and slice lengthwise. Then cut across into 1/2-inch pieces
- add the remaining tomato juice to one of the mixing bowls. Add 2 cups of water to the empty tomato can, swirl, and add to the tomato juice
- Add 1/2 cup of water to the saucepan and reduce the heat to medium. Add the onions and spread evenly. Bring to a boil and stir occasionally. Cook until the water is nearly evaporated
- Fill a large Dutch oven 3/4 full and turn the heat to high. The bucatini will have a longer cook time than most other pasta due to its thickness. Depending on the pasta company, the cooking time should be 17 to 22 minutes.
- When the water boils, add one teaspoon of salt and the pasta. Set a timer to your desired doneness.
- Once the onions are nearly dry, add 4 tablespoons of olive oil to the pan, add the garlic, and ½ teaspoon salt. Stir well and cook for another two minutes until the onions and garlic blister.
- Add the pancetta to one side of the pan and begin cooking.
- Add the red pepper flakes and stir into the onions
- When the pancetta begins to brown, stir with the onions.
- continue cooking until onions begin to caramalize.
- add the tomatoes and the bowl with the water and juice.
- add a 1/4 to 1/2 teaspoon of salt and stir.
- Bring to a boil, then reduce heat to a simmer. You'll want the simmer to be a weak boil so the sauce will reduce and thicken. Keep cooking for between 15 and 20 minutes,
- When you think the bucatini is done, test the pasta before you turn off the heat. You'll want to make sure the bucatini is done to your liking.
- add the bucatini directly into the sauce and stir to combine. Don't discard the pasta water until the cheese has been added. If the sauce to too dry, add a little pasta water until the sauce reaches your desired consistency.
- add the cup of grated cheese and stir to combine.
- remove from heat and serve
